My Christmas 2014



This Christmas happened to be a special Christmas for all of us, specially to our kids in the family and to our Birthday boy.
Make it more special this year I add more colors to our house. 
Very simple techniques but make us feel so happy.

Kirinda Temple

Kirinda, is a small town and a small port located on the south coast of Sri Lanka about 270 km from the city of Colombo and about 10km radius from the south of the ancient old religious city, Tissamaharama.
The story behind Kirinda is in the 2nd century BC, King Kelanitissa reigned over the west of the island from his capital at Kelaniya. Having suspected a Buddhist bhikshu (monk) of being involved in an intrigue between the Queen and his brother, King Kelanitissa had the monk tipped into a cauldron of boiling oil to the untold horror of his subjects.
It was prophesied that the kingdom could be saved only by way sacrificing a princess to the raging sea. The eldest daughter of the king, already reputed for her bravery, rose to the occasion to save her nation. Overcome with remorse, the king decided to atone for his sacrilegious act by making the sacrifice that would appease the gods. Accordingly he had a golden boat built, loaded it with one month's provisions for one & cast it adrift with his daughter. The boat carried an inscription that on board is no less than a princess. The boat was cast away onto the shores of Kirinda & the news was carried to the King Kavantissa, who reigned in Ruhuna. It was already prophesied, that if the king was ever to marry, it would only be a princess arriving over the seas.
The princess, named Queen Vihara Maha Devi, for her bravery, bore the king two sons who were to become heroes. The elder son King Dutugemunu (161 - 137BC) of Ruhuna became the greatest hero of Lanka by rescuing the nation from the marauding Dravidian invaders from south India. Viharamaha Devi herself is recognized as the heroine of our motherland.

Unawatuna Beach Resort - UBR

Unawatuna Beach Resort(UBR) is one of the loveliest beach resorts I ever being to. It is a very nice place to relax watching the sea. 

This time we booked luxury room and they did give us 5 star treatment. It has a huge bathroom with jacuzzi, sofa bed, hair dryer, bathrobes, lots of towels, slippers ... etc.

Also I must say I'm intrigue with their buffet. They so many selections for locals and also foreigners. I don't whether that happens because that day there was lot of local. But anyway I'm so impressed with the food.

Jelly Pudding

After a long time I thought to post a blog regarding a recipe.
Today's recipe is Jelly Pudding.


Ingredients


  1. Milkmaid Sweetened Condensed Milk - 1 small tin 
  2. Jelly packet - 1
  3. Fresh cream - 200 ml 
Method

  1. Prepare the jelly packet as per instructions. Keep in freezer till the jelly begins to set at the sides.
  2. Whip the chilled fresh cream till it is light and keep it a side.
  3. Pour Milkmaid and whipped fresh cream into the semi set jelly.
  4. Serve Chilled.
Hope you can serve this to your kids and visitors easily.

Mango and Yogurt Treat

In case you have lot of visitors frequently, you need to be little creativity with  your servings. Otherwise they might think that you are serving the same thing everyday. Well today's special at my place is the mango and yogurt treat, which happens to be a dessert.

Ingredients: 

  1. Mango & Pineapples (If not you can also take canned fruits.)
  2. Yogurt
  3. Plums
  4. Golden syrup or honey (Not necessary)
Method:

  1. Take few bowls or desserts cups
  2. Place a layer of yogurt and on top of that a layer pineapple.
  3. Again place a layer of  yogurt and on top of that a layer mango. Continue layering until all the ingredients are used up
  4. Sprinkles a layer of plums.
  5. If you guests like to have it sweet add honey on top of everything.
Enjoy the day. 

Biscuit Pudding

These we can easily buy biscuit pudding at supermarket, but I always believe that home made food are the best.

Ingredients:

  1. Marie biscuit - 2 small packets (400g)
  2. Cashew nuts - 100g
  3. Plums - 100g
  4. Pumpkin Preserve - 100g
  5. Coffee powder - 2tsp
  6.  Chocolate powder - 3tbsp
  7. Corn flour - 2 tbsp
  8. gelatin - 1 small packet
  9. Milkmaid - 1tin
  10. Egg yolk - 2
Method:
  1. Cut cashew nuts and pumpkin preserve into a small pieces. Mix cashew nuts, pumpkin preserve and plums and keep it a side.
  2. Mix milkmaid tin with 4 cups of hot water and keep it a side.
  3. Mix the gelatin packet with 1 cup of hot water and keep it a side.
  4. Mix coffee with 1 cup of water and close it with a lid and keep it a side.
  5. Mix chocolate powder and cornflour powder with previously made 2 cup of milk.
  6. Crush biscuits into to a small pieces and put it into a ball and then pour rest of the milk over it.
  7.  Mix together the chocolate mixture, coffee, & egg yolk. Put it in the heat stir the chocolate custard till it become a thick mixture.
  8. Take the chocolate mixture off from the heat add the gelatin mixture and stir well.
  9. Take flat glass dish.
  10. Pour layer of chocolate custard at the bottom of the dish.
  11. Arrange biscuit layer on top of it.
  12. Sprinkle a fruit layer on top of it.
  13. Layer it twice, as its done before and finally sprinkle fruits mixture over the top.
  14. Put in the refrigerator till you serve.

Mushroom Soup

Today I made my family a nice dinner with mushroom soup. But I add something extra than traditional recipe. Let me share it with you all.

Serves 5 people
Ingredients:

  1. Sliced large onions - 2
  2. Sliced button mushroom - 200g (1 packet)
  3. Grated Carrots - 2
  4. Green chilies (If you prefer it's to be a hot dish)
  5. Fresh milk - 1 1/2 cups
  6. Water - 
  7. Corn flour - 2 tbs
  8. Oil (What ever you used to cook) or butter
  9. Soup cubes (Not necessary) - 2
  10. Salt & Pepper to taste
Method
  1. Add oil or butter into in the pan and let it heat.
  2. Add sliced onion.
  3. Saute for about 5 min in low flame.
  4. Add grated carrot & saute for another 5 min.
  5. Add chopped mushrooms & saute for another 5 min.
  6. Mix corn flour with 1 cup of water and add it to the mixture.
  7. If you prefer you can mix the soup cube with another cup of water and add it to the mixture.
  8. Add 1 1/2 cup of water.
  9. When water starts boiling, add fresh milk.
  10. Stir well & add salt, pepper, & green chilies.
  11. If the soup is too thick, add some water.
  12. Heat the mixture for another 10 min.
  13. Finally serve hot.

Fruit Cake

Is there any cake fans who loved to eat or love to start baking cakes?
Well advice is start baking your first cake with a butter cake or a fruit cake. Once you mastered that, then you can bake any cake without any problem.

Ingredients for 1kg cake
  • 250g Flour
  • 250g Sugar
  • 250g butter or margarine 
  • 5 eggs (250 g)
  • 1/4 cup of milk
  • 2 teaspoons baking powder
  • 1 teaspoon Vanila essence
  • Fruits (raisons, cashew nuts, cherries, pumpkin preserve... etc. )
Method 
  1. Mix flour and baking powder and keep it a side.
  2. Beat sugar and butter together, then add eggs one by one and beat well until sugar dissolves.  (For this use a hand beater or a electric beater, but never use a food processor kind of equipment)
  3. Add vanila essence and mix well.
  4. Add milk and mix well.
  5. Preheat oven 180°C
  6. Add flour mixer gradually in small quantity and mix well.
  7. Bake at 180 °C in a per-heated oven for 25 – 35 minutes.

Bandarawela Hotel

On our trip to Bandarawela, we stayed at Banadarawela hotel which you can see in this image.

It situated in the middle bandarawela town and you can't miss it by any chance.


Bandarawela Hotel built in 1873, has been well maintained (rooms are clean and I give 5 star for that but I think they didn't maintain the garden well) yet not modernized, retaining the original architecture and interior decoration.(Actually when we arrive there we were extremely surprised with the interior. They gt huge tall bed which we hardly climb up. They gt there wash basin in the room. Entree to the balcony in the bathroom. Huge bath tub, but we didn't use it because we thought it's a waste of water.)

Bandarwela Hotel is belongs to the Aitken Spence Group of Companies in Sri Lanka.

You can definitely have some kind of a unique experience there.

Tips: 

  • Room are cold when the whether outside is cold (They may be give heaters but we didn't ask, so we can't confirm that.)
  • Sound from the mosque could be a disturbance, better ask for an upstairs room.
